For years, the UP College of Hotel and Restaurant Administration and Home
Economics has been training students in
the hospitality and food industry. We see them today as leaders in their
profession, many of them innovators.
Cooking with Filipino Chefs features some of our graduates and the others
who have pursued the same career but trained elsewhere.
Yet what is noteworthy about this book is that no
matter where these chefs trained, they all willingly contributed to the project
because the goal was for a Thesis Scholarship Grant for graduates like
themselves but who can't afford the financial requirements of a higher
education.
This book becomes special too because it is spearheaded by an alumnus,
Susana P Guerrero, who founded the Center for
Culinary Arts, Manila patterned after professional culinary schools
abroad. What an unselfish gesture from someone who has clearly shown all of us
that while ours is a deeply competitive field, there still is a strong spirit of
cooperation when the end in view is for a food and hospitality industry that is
manned by highly-trained people, true professionals
